gluten + dairy free pancakes


(Don’t worry. This makes more than two pancakes.)

I don’t know about you, but there’s just something about waking up and having pancakes for breakfast. And I know it’s hard if you have allergies or are trying to eat better, so this is what I came up with. They are SUPER FAST and EASY to make.

Based on different recipes I’ve found on Pinterest, however, most of them I didn’t have all of the ingredients for. So I just kind of winged it.

These are the BEST with peanut butter & honey on them, for sure 🙂


–> 1/2 cup brown rice flour

–> 1/2 cup gluten free flour

–> 1 tsp baking powder

–> 1/4 tsp sea salt

–> 1 egg

–> 2 tbsp EVOO (extra virgin olive oil)

–> 1 cup unsweetened vanilla almond milk

–> 1/2 tsp vanilla

–> a kiss of honey (about a tbsp.)

–> olive/coconut oil for cooking

–> peanut butter & honey for serving

how to make them

1. Mix all dry ingredients together in one bowl. Mix all wet ingredients in another bowl. Then whisk together.

2. Heat a pan over medium heat, and add some olive oil. When it’s warm, use a 1/4 cup of batter to pour into the pan. (This makes one little mini pancake.)

3. Cook them til golden brown each side. This should only take about 2-3 minutes.

Voila! Done!

    • Well … we think that my mom and I have some allergies, but we’re not really sure. So we’re doing gluten free for 30 days and then I’m the only one going dairy free.

      I think dairy gives me some problems, and some of them have cleared up already even though I’ve only been off of it for 2-3 days. It would definitely be a bummer, because I am a HUGE dairy eater. Love the stuff. But we’ll see 🙂
